Title: Three Cheese Potato Pie

Yield: 4 Servings

2	lg	Eggs, beaten
2	c	Mashed potatoes (leftovers)
1	c	Grated Swiss cheese
1	c	Sour cream
1/2	c	Cottage cheese
1/4	c	Grated Parmesan cheese
1/4	ts	Pepper
	ds	Salt (if desired)
1/3	c	Chopped green onions, including tops

Preheat oven to 350 degrees.

Grease a 10 inch deep dish pie pan or spray with vegetable oil. Set aside.

Mix all ingredients together in a large bowl until well blended. Pour into pie pan.

Bake for 60 minutes OR until filling is puffed and evenly browned on the top.
